Thotakura pesara pappu fry
4 bunch chopped amaranth leaves
½ cup moong dal ( green lentils)
½ tbsp mustard seeds
½ tbsp cumin seeds
½ tbsp urad dal
½ tbsp chana dal
3 garlic pods
2 Red chilies broken
1 sprig Curry leaves
4 green chilies chopped
1 chopped onion
A pinch of turmeric
Salt to taste
1. Wash and soak green lentils for 30 minutes.
2.Heat oil in a pan, crackle mustard seeds and cumin seeds, urad dal and chana dal. Add red chili, garlic pods, and curry leaves. Fry for a minute.
3. Add soaked green gram, chopped amaranth leaves, and cover with a lid.
4.Cook for 3 to 4 minutes till the green lentils are cooked so that the dal is cooked and hold its shape. It should not be overcooked.
5. Serve the Amaranth leaves moong dal fry/Thotakura Vepudu along with steamed rice or roti.
